Q1. What is your favorite sushi topping?

  1. Tuna
  2. Salmon
  3. Shrimp
  4. Young Yellowtail
  5. Engawa (Flounder Fin)

Respondents’ Feedback:

■Tuna

 – I love tuna because its flavor varies by cut, like lean, medium-fatty, and fatty tuna. I splurge on fatty tuna for special occasions.

■ Salmon

 – I’ve loved salmon since childhood. The melt-in-your-mouth texture is irresistible.

■Shrimp

 – I always order sweet shrimp at sushi restaurants. Its unique, sweet, and firm texture is unbeatable.

■Young Yellowtail

 – Eating yellowtail with its perfect fat content is pure bliss. I often get seconds when it’s fresh and firm.

■Engawa (Flounder Fin)

 – I enjoy its unique crunchy texture and the rich, melt-in-your-mouth flavor that makes it a great snack with alcoholic drinks.

Q2. Where do you usually eat sushi?

  1. Conveyor Belt Sushi : 48.1%
  2. At Home : 37.7%
  3. Sushi Restaurants (Non-Conveyor) : 9.4%
  4. Restaurants/Izakayas (Other than Sushi Places) : 4.7%

Respondents’ Feedback:

■Conveyor Belt Sushi

 – I often go to conveyor belt sushi restaurants with my family. It’s affordable yet feels luxurious.

■At Home

 – I usually buy sushi from the supermarket and eat it at home. It allows me to enjoy sushi at my own pace.

■Sushi Restaurants (Non-Conveyor)

 – I visit non-conveyor belt sushi restaurants for a more authentic experience, despite the higher cost.

■Restaurants/Izakayas (Other than Sushi Places)

 – I often finish off with sushi if it’s on the menu when I visit izakaya. It’s a refreshing finish after drinking.

Q3. How often do you eat sushi?

When asked about the frequency of their sushi consumption, the responses were as follows:

  1. Once every 2-3 months : 31.7%
  2. Once a month : 27.7%
  3. Every 2-3 weeks : 18.8%
  4. Every six months : 12.9%
  5. Other : 9.9%

  2. Taste : 27.8%
  3. Affordability : 17.2%
  4. Cleanliness : 13.7%
  5. Other : 10.3%

Respondents’ Feedback:

■Freshness

 – The freshness of the fish is crucial. Even if other aspects are good, lack of freshness is a dealbreaker.

■Taste

 – I keep returning to places with soft rice and delicious toppings.

■Affordability

 – I want to eat good sushi at affordable prices, so I often go to conveyor belt sushi places.

■Cleanliness

 – Handling raw fish requires cleanliness, and a clean environment makes me feel safe eating sushi.

■Other

 – I appreciate a variety of sushi options. Conveyor belt sushi chains are great because they also offer many non-sushi dishes.
